With sole, for many the most familiar of the delicious flatfish. Widely distributed, the flounder has a wide distribution and is justly famous as a food fish. The flesh is delicate, and should be prepared with (preferably fresh) herbs and a mild sauce. Because it is delicate, it is often poached. Flounder can grow to somewhat large size, but the best eating is represented by the fillet size offered here. Serve with a white wine with a hint of apple.
