Grouper are a reef-dwelling fish, found all over the world, but in greatest variety in tropical waters. The different species range widely in size. Red grouper is the best known of the domestic varieties, but virtually all of them are sought after for their firm and mild but flavorful flesh. Grouper can be prepared virtually any way that a fish can be prepared. Larger fillets are excellent grilled. Good with fruit flavors, grouper can support even lighter red wines.
