There are many varieties of shark, as most people know, but Mako and Black Tip are the most highly prized for their food value. A smaller shark, the Mako is found in warmer shallows of a wide distribution. A schooling shark, it reproduces quickly and therefore isn’t protected, as some rarer species are. The loin is typically cut into steaks two to three fingers wide. Good on the grill, it’s surprisingly mild, and should be prepared with light seasoning, or even drawn butter for dipping, as one would do with lobster. It is best to oil the steak before cooking, to prevent it from drying out while searing. A hoppy IPA or margarita goes well.
