There are many species of snapper, but the Red Snapper is the most famous and sought after. There are many fish that have been made to be red snapper, so it’s best you buy yours from a reputable fish-seller. The scales of the true one are largish, and this is a giveaway. Most buyers therefore wish to see fillet in the case skin-on before they purchase, even if they do have it skinned before taking it away. There are so many recipes online that I’m not going to reproduce any, but snapper almondine is rightly famous. Serve with a wine that is delicate to the palate.
