Skipjack is a true tuna, despite what the name might suggest. It’s a schooling fish that reproduces more quickly than other tuna, so the population is very healthy. It sometimes goes by the name of bonito or aku. It’s a little darker than some other species of tuna, but still relatively mild, somewhere between the taste of a true jack and the more familiar albacore. In Asia, it is sometimes used for sushi, but to the western palate prepares best on the grill. Try a peppery Shiraz.
