Soft Shell Blue Crabs

Product Description

When the blue crab molts and sheds its old shell for a new one, there’s a small time-window in which they can be collected as soft-shells.  The new shell hasn’t had time to calcify and harden.  As a result, you can do away with almost all the work involved in eating this delicious crab. 

Depending on the size, a couple to several crabs can make a meal.  Sometimes they are deep fried, but the results are too often oily.  Pan fry them, instead at a high enough temperature that the outside is slightly seared.  Roasted veggies make an excellent side.
