Swordfish steaks are aptly named. Light on the belly, like any fish, swordfish has some of the texture and density of a good beef steak. Most often it is grilled. You may wish to marinate it in a half olive oil/half orange juice mixture beforehand. Serve with any solid red table wine deserving of the company. Unlike some fish, it freezes well.
