Usually served as a steak, there are many varieties of tuna. Yellowfin tuna is usually meant. It has a bright, almost translucent flesh. Top quality tuna is often served as sushi, but the sashmi grade is very expensive. For cooking, the next grade down (Grade 2) is excellent and considerably cheaper. Contrary to some opinion, tuna freezes very well if properly done, and if fresh even the bloodline is tasty. Grill it, and serve with anything you’d serve a good beef steak with.
